In 2022, he opened Kooya Filipino Eatery in Dubai, bringing the heart and soul of his nation’s culinary traditions to a broader, international audience.

Among Chef JP’s personal highlights is the Palabok — a beloved noodle dish known for its versatility and vibrancy. “It’s uniquely Filipino, endlessly adaptable, and one of those dishes that keeps evolving. In our kitchen, we’re always finding new ways to reinterpret it,” he shared.
